This is my favorite dish to make because I can incorporate all different flavors of basil into one dish. Cho Ramaswamy is my take on a traditional Thai dish where the noodles are cooked until they are just barely tender, then the filling is served over the top.

If you make a lot of it, you can freeze it and then reheat it later. It’s so simple, no-one would think you’ve made it too often. You can also make some up at home and freeze some. Once frozen it’s easy to have a big bowl of it for lunch.
